Ingredients:
1 pound wild salmon, cut into portion size
2 tbsp olive oil
1 tbsp lemon juice
1 tsp paprika
½ tsp cayenne powder
1 clove garlic
1 tsp salt
Freshly ground black pepper to taste
Lemon wedges for serving
Directions:
Grind or mash the garlic clove with salt to form a paste.
Mix garlic paste with olive oil, lemon juice, paprika, cayenne powder and black pepper.
Rub salmon with the paste.
Grill salmon skin side up over medium heat for about 3 minutes.
Flip salmon pieces over and grill for 2-3 minutes or until fish flakes easily with a fork.
Serve with lemon wedges/slices on the side and on a bed of grilled corn salsa.
